Copy all folders from the top of your repository:
--CVSROOT
|-Module1
|-Module2
etc

When you need to restore then get all of them back.
The files in the CVSROOT directory contain administrative information
and some logging data. All other files are mirror files of your own
actual files. They are there with a ,v tacked on to the end of the
name to indicate thta they are so called RCS files which in single
files contain all revision of the actual file.
